Pastry Sous Chef

Location: Richardson, TX

Summary/Objective

The Pastry Sous Chef will assist the Executive Pastry Chef in the production of pastries and deli products according to recipes and presentation standards.  This position will be directly supervised by the Executive Pastry Chef and does require some advanced knowledge of procedures, tools, techniques in food production.

Duties and Responsibilities

  • Assists Executive Pastry Chef in day to day flow of pastry productions by writing production lists, assigning tasks, and training members of pastry team
  • Has working knowledge of advance pastry techniques and well-rounded in all areas of the pastry kitchen including breads, pastries, confections, and cake design.
  • Ensure quality of product before it reaches the sales floor and proper storage.
  • Deliver outstanding guest service by following through on all guest questions, requests and resolve concerns as needed.
  • Assists Executive Pastry Chef in monitoring product movement and shrink
  • Follow and comply with all applicable procedures and regulations, including Weights and Measures, FDA, health and sanitation, Department of Labor, ADA, HAACP, OSHA and safe work practices.
  • Sanitize all equipment in a safe and proper manner
  • Report equipment issues to Store Leadership
  • Keep all cases and shelves clean, well-stocked and properly rotated
  • Assists Executive Pastry Chef in making supply and ingredient orders
  • Performs other duties as assigned by Store Leadership

Qualifications

  • 2+ years or more experience in a deli and or bakery department
  • Guest Service focused
  • Pastry degree or certification preferred
  • Food Handling permit

 

Working Conditions

  • Walking, standing, bending and stooping for 8-10 hours a day
  • Push, pull up to 50lbs
  • Mental and physical dexterity
  • Ability to climb ladders
  • Iteration of duties
  • Ability to taste, smell, feel and visually inspect food
  • Unassisted lifting up to 50lbs or more
